Few places do laybye nowdays, kmart and the lower priced goods stores do, but perhaps high end speciality cooking product shops don't. I haven't seen that brand at Kmart. ;0
5 yrs ago I was renting and the house had a wizzbang stove with a glass hotplate thing with red dots, when they disappeared the hotplate was supposedly hot enough to cook on. I'm wondering how the pot (he endorses) knows exactly what you are cooking to arrive at the right temperature....
and I saw his cooking in Italy show, he was staying in a rustic old place for a bit with an ancient wood oven (he burnt some things too!) hehe even cooking masters make mistakes with poor tools.

Lay-bys have lost favour because credit cards are so common now. Why bother storing stuff, when people can just 'pay' for it and go ...
Oooh! one of *those* stoves ... induction stoves ... niiice :)
wood ovens are awesome. not "poor tools" at all - but they do require *attention* to use well, since regulating heat is not done for you :)
